The name -raclette- comes from the French word racler, which means to scrape. In raclette, the cheese is heated on one side, after which the melted cheese is scraped off. Traditionally, raclette cheese is eaten with potatoes, gherkins and pearl onions. After about 3-4 raclette portions, a crispy crust appears on the edges of the cutting surface.
